Shun Classic
The icon that started it all
Shun Classic is Shun's original line and the one many cooks picture when they think of Japanese knives. Each blade has a VG-MAX steel cutting core clad in 68 layers of Damascus stainless steel, giving it that rippled, water-like pattern and a razor-sharp 16° edge. The D-shaped ebony PakkaWood handle settles naturally into your hand and holds up to everyday kitchen life.
- VG-MAX core, 68-layer Damascus
- Ebony PakkaWood D-shaped handle
- Handcrafted in Seki, Japan
Shun Classic Blonde
Classic performance, lighter look
Everything cooks love about Shun Classic, dressed in a light, natural tone. You get the same VG-MAX core, 68-layer Damascus cladding and 16° edge, paired with a blonde PakkaWood D-shaped handle that brightens up any counter or knife block.

Shun Premier
Hand-hammered beauty that releases food
Shun Premier pairs a VG-MAX core and 68-layer Damascus cladding with a hand-hammered tsuchime finish. Those little hollows aren't just beautiful, they help food fall away from the blade as you slice. The contoured walnut-finish PakkaWood handle and embossed end cap make it one of the most comfortable Shun knives to hold.

- Hammered tsuchime finish
- Walnut-finish PakkaWood handle
Shun Premier Blonde
Hammered finish, soft natural tones
Premier Blonde keeps the hand-hammered tsuchime blade, VG-MAX core and 68-layer Damascus of Shun Premier, then sets it in a contoured blonde PakkaWood handle. It's a bright, modern take on one of Shun's best-loved designs.
- VG-MAX core, 68-layer Damascus
- Hammered tsuchime finish
- Blonde PakkaWood handle
Shun Dual Core
Two steels, one remarkable edge
Dual Core blades are forged from 71 alternating micro-layers of VG10 and VG2 stainless steel that run all the way to the cutting edge. Because the two steels wear at slightly different rates, the edge develops fine micro-serrations that keep it cutting beautifully between sharpenings. A traditional octagonal ebony PakkaWood handle and a wooden saya (sheath) finish the package.
- 71 layers of VG10 & VG2 steel
- Octagonal ebony PakkaWood handle
- Wooden saya included
Shun Kanso
Simple, rugged and made to work
Kanso means simplicity, and this line strips a knife down to what matters. Blades are solid AUS10A high-carbon stainless steel with a heritage finish that hides scratches and only looks better with use. The full-tang construction and contoured tagayasan wood handle, known as "iron sword wood" for its toughness, give it excellent balance.
- AUS10A high-carbon stainless steel
- Heritage blade finish
- Tagayasan wood handle, full tang
Shun Kazahana
Clean lines and effortless prep
Kazahana takes its name from the Japanese word for snowflakes drifting in a clear sky. The solid AUS10A high-carbon stainless blade has a satin finish that helps food release cleanly, sharpened to a 16° edge. A polished black PakkaWood handle and full-tang construction with a chamfered, slightly exposed tang make it comfortable, durable and easy to care for.
