Three blades, three jobs

The 8" chef's knife is The Original, designed in 1886 — curved belly for rock-chopping, enough length for cabbage and melon. The 3.5" paring knife takes over once food leaves the board, for hulling, deveining and peeling. And the 5" serrated utility knife handles what neither should touch: tomato skin, crusty rolls, citrus peel and bagels, where a straight edge either slips or crushes.

Adding the serrated blade also protects the other two. Acidic, tough-skinned food is what dulls a chef's knife fastest, so keeping it off that work extends the time between sharpenings.

All three are precision forged from a single piece of high-carbon stainless steel, hardened to 58 Rockwell, then sharpened by Wusthof's computer-controlled PEtec process for a 20% sharper edge with twice the edge retention. The triple-riveted full-tang handles are finished in Fresh Rosemary — a deep, grounding green from the seven-shade Classic Color collection.
