Wusthof Classic 13 Piece Block Set is where a home block starts to look like a line cook's roll. Eleven forged pieces, come-apart shears and a twelve-slot chocolate-stained ash block — enough coverage that you stop reaching for the wrong knife.

The specialty blades

The additions are what separate this set from a ten-piece. A 7" hollow-edge santoku gives you a second everyday knife with a flatter profile and dimpled edge that releases potato, cucumber and cheese. A 5" boning knife follows joints and rib bones on meat and fish. A 6" cleaver supplies the mass for poultry backs, winter squash and hard rind. Two paring knives, at 4" and 3.5", mean one can live by the sink.

Every blade is forged from a single piece of high-carbon stainless steel across more than 40 production steps, hardened to 58 Rockwell, then sharpened by Wusthof's computer-controlled PEtec process for a 20% sharper edge with twice the edge retention. The full bolster acts as a finger guard, and the triple-riveted handle bears the embedded Wusthof trident.
