The Opinel Parallèle No.123 Carpaccio Knife is a straightforward, well-made kitchen knife from the French company best known for its folding pocket knives. The long, very flexible blade is just 1.5 mm thick, so a smooth back-and-forth stroke cuts very fine, even slices of raw or smoked salmon, ham and beef carpaccio.

The 11.81-inch blade is X50CrMoV15 stainless steel, hardened to 56-57 HRC. This steel is highly anti-corrosive and gives a clean, accurate cut. Like every Parallèle knife it is half tang and stamped from a single piece of steel, which keeps it light and nimble. The handle is varnished, PEFC-certified beech wood from eco-managed forests in France's Jura and Vercors regions; its soft, clean lines make it robust and comfortable in the hand.

  • Blade: 11.81 in (30 cm), long flexible
  • Steel: X50CrMoV15 stainless steel, hardened to 56-57 HRC
  • Handle: varnished beech, 5.2 in (13.2 cm)
  • Construction: half tang, stamped single piece
  • Thickness: 1.5 mm, very flexible
  • Weight: about 3.1 oz
  • Care: hand wash

Care: Wash by hand with warm soapy water and dry right away. Do not soak the knife or put it in the dishwasher, which can damage a wooden handle.

About Opinel: Opinel has made knives in Savoie, in the French Alps, since Joseph Opinel designed his first folding knife in 1890. Every blade carries the Crowned Hand stamp, and Opinel backs its products with a limited lifetime warranty against manufacturing defects.
