The Opinel Parallèle No.120 Carving Knife is a straightforward, well-made kitchen knife from the French company best known for its folding pocket knives. It is ideal for carving with a fork: roasts, leg of lamb and poultry. It handles well enough that it is also an effective knife for slicing fruit and vegetables.

The 6.3-inch blade is X50CrMoV15 stainless steel, hardened to 56-57 HRC. This steel is highly anti-corrosive and gives a clean, accurate cut. Like every Parallèle knife it is half tang and stamped from a single piece of steel, which keeps it light and nimble. The handle is varnished, PEFC-certified beech wood from eco-managed forests in France's Jura and Vercors regions; its soft, clean lines make it robust and comfortable in the hand.
