No need to baste the meat during cooking, the steam circulates naturally thanks to the lid. The Emile Henry Chicken Baker is designed for cooking the perfect roast chicken. Designed to circulate moist air, the lid keeps the chicken tender at on the inside and evenly browns on the outside. It's also great for roasting vegetables, small cuts of beef and pork. Place your chicken in the Roaster then add chopped vegetables or potatoes around the sides: the meat will be moist and the vegetables succulent!

Small roaster: will fit a turkey up to 10 lbs.

Tips:

  • Brine your turkey- Brining the turkey will ensure a juicier, more well-seasoned bird. Brine for 12-14 hours in a solution of 1 gallon of water and 1/2 cup of sea salt.
  • Reserve the liquid in the bottom of the Roaster to make a gravy.
  • Don't throw anything away, save the giblets and carcass to make turkey stock.
  • Put pads of butter or a seasoned compound butter underneath the skin of the turkey for extra flavor and moisture.
  • Let the turkey rest before carving so the juices can redistribute.
